I’m not feeling particularly creative tonight so I’m going to re answer Kate’s questions: Here we goooo!


1.) Who is your favorite philosopher? My nerd side is about to come out.  My favorite philosopher is John Locke, he is credited with the basic fundamentals of democracy and our founding fathers took his views and made them the views of our country. And I mean, who doesn’t love democracy?

2.) What is your favorite number? 13. I was 13 every year of soccer and softball and my birthday is April 13th.

5.) What is your favorite time of day? I love night time. I love coming home, changing, making dinner and just relaxing. That is the bees knees.

6.) What was your favorite holiday? FOURTH OF JULY!

S’mores Cookie Bars!

Holy cookie do I have an amazing recipe for you! If ya’ll haven’t noticed baking is my jam!

S’mores Cookie Bars

recipe adapted from



Whatchya’ll need:

  • 2 cups all purpose flour.
  • 2 cups graham cracker crumbs.
  • 1 teaspoon baking powder.
  • 1/4 teaspoon salt.
  • 2 sticks un salted butter, softened.
  • 1 1/2 cup lightly packed brown sugar.
  • 2 large eggs.
  • 2 cups Marshmallow Fluff
  • 2 bars Hershey’s Chocolate.

Preheat oven to 350 degrees.  Line a 9×13 inch pan with foil leaving a 2 inch overhang on the short sides.  Grease the foil and set it aside.  In medium bowl combine the flour, graham cracker crumbs, baking powder and salt.  In large bowl, using an electric mixer on medium speed beat butter and sugar until creamy.  Beat in eggs until well combined.  Slowly beat flour mixture into butter mixture.  Divide the dough in half.  Press half the dough into pan until dough is flat and pan is covered. Spread marshmallow fluff over the layer of dough.  Spread broken chocolate pieces over the fluff.  Scatter remaining dough over in clumps.  Bake until golden brown. 30-35 minutes.  Once cool, remove from pan, peel off foil and cut into bars.


A Terrific Tuesday!

Hey y’all!  Sorry for the lack of a post yesterday, lets just say being at school for 12 hours and then working till after midnight didn’t give me much time to blog let alone eat, basically I had a crepe with jam. Nutritious right?


Today is my day off all around. No school. No work.  Key the relaxation and staying in bed all day. Wrong.  Today has been actually on the busy side, but the good kind of busy! I started the morning off with a 2 mile run outside,  it’s finally not raining and warming up and I was itching for a run outside.  I had a good amount of errands to run and after showering off I headed out to start the day.  First a stop at my favorite place, Starbucks.

Sooo not healthy, but sooo good! I hit up Target for some necessities but somehow ended up with oh, way more crap then I needed, or want. tumblr_md4ustAItu1qh5n42o1_500Does anyone else feel this way too?  I swear I can’t go to Target and buy just one thing.  Please tell me I’m not crazy!!


Lunch was s classic. Sloppy Joes! Slow Start Sunday

Usually my Sunday’s get off to an early and quick start but this morning when my alarm went off at 8 I just wasn’t feeling getting out of bed and decided to snooze it for an hour till 11.  Oops.  But Hey! Sometimes your body just needs the extra sleep, and with all the germs floating around work the risk of getting sick is high so I wanted to make sure I gave myself plenty of rest!

After finally getting out of bed I figured a grocery trip was in desperate need, I was low on the essentials. And basically I wanted an excuse to get Starbucks.  Breakfast was an un pictured Grande skinny caramel macchiato and a spinach feta wrap!  I had an inspiration for a mid week meal at the grocery store and I have a feeling it’s going to be amazing and I can’t wait to share the recipe with you guys!


Lunch came together in a flash thanks to some fish and roasted in veggies in the refrigerator that needed to be used up! Lightly seasoned and pan cooked for a couple minutes each side=deliciousness!  Some rice on the side and a great lunch was made! photo(5)

Breakfast is the best!

Lets quickly talk dinner last night so I can get to breakfast!

Dinner was a remake of Thursday nights dinner.  Leftovers are the bomb. I think food tastes so much better after sitting in tuperware over night.  Pasta casserole reheated with an un pictured bowl of carrots and broccoli!  photo 2(6) I worked last night so in between customers I snacked on a tiny bowl of Wheat Thins!  My favorite!


My favorite meal of the day just happens to be breakfast so I was extra jazzed about a breakfast date with my Dad this morning! We headed to a local favorite, Sugar Shack, on Main St. in Huntington Beach!  For a rainy Saturday there were a surprising amount of people out and about!  This place is classic breakfast food at it’s finest.  Their pancakes rock my world.  I ordered a short stack of pancakes and an egg over medium on the side! photo 3(5)The standard cup o’ joe, too! Clearly I was starving, ate a bite out of my egg before I paused to take a picture. Attractive, right?  (Side note:  I’m working on persuading myself to buy an actual point and shoot camera so these jankidy photos can bounce!) My dd had the HSS special, which was basically a standard breakfast sandwich with potatoes on the side!  I can say mine was delicious, and his looked good!

Plans for today include work, laundry, and some rainy day laziness!  Happy Saturday, friends! 🙂

I always get pancakes or french toast.  I know I can make both at home, and probably healthier versions, but I LOOVE ordering them at restaurants!

Good Morning and Happy Friday everyone! It’s an awfully rain Friday over here! I feel I need to pause and let y’all in on what I’m thinking “Holy shit I can’t believe it’s already the third week of january…and it’s over.”  For someone who feels like 2012 flew by, I have to say 2013 is already off to a fast start.  I work retail so the concept of a weekend is pretty skewed and Fridays are not as special as they were in high school, I don’t mind though I honestly love my job. My plans for tonight include closing at work (meh), watching Law and Order and snuggling in a warm bed!


Breakfast this morning was a favorite. TJ’s whole wheat waffles topped with bananas and some syrup!  Yum!

It’s suppose to rain all weekend and while I was hoping for a beach run tomorrow morning it looks like I’ll be settling for an indoor cycling class.

National Peanut Butter Day!

Happy National Peanut Butter Day y’all!  How are you guys celebrating? I’m celebrating by baking up my favorite Peanut Butter Chocolate Chip Banana Bread.  This stuff does not disappoint!  Great minds are thinking alike today because I’ve seen more than one PB Banana Bread recipe out there today, two of them come courtesy of two of my favorite bloggers, Carrie and Natalie!  Make sure you check those out! First things first, eats and the aquarium!


Today, one of my favorite coworkers and I both had the day off and decided to day trip it to the aquarium!  I love science and marine science has always been my favorite.  Before we left I made myself a filling lunch.  Ham and cheese sandwich on an Oro Wheat Sandwich thin.  In the sandwich was a squirt of mustard (love the stuff), laughing cow cheese, ham and tomato. A banana on the side for some 1(3)I also enjoyed a hot chocolate at the aquarium to you know, keep me warm while outside 😉

After a solid two hours playing with the creatures of the ocean blue it was time to head home and I was starvin like Marvin.  Dinner tonight was comfort food at it’s finest.  A baked pasta casserole, homemade bread, and a salad. Nothing better.  The pasta casserole was out of this world good. Probably not the healthiest, but I’m willing to sacrifice 😉  My step dad is an amazing cook and I love when he makes dinner, especially because that means I don’t have too!

Now I’ll shut up and get to that banana bread

Peanut Butter Chocolate Chip Banana Bread/Muffins.


What you’ll need:

  • 3 or 4 ripened bananas, smashed well.
  • 3/4 cup plain greek yogurt. (Regular yogurt will work well too.)
  • 3/4 cup sugar.
  • 1 egg, beaten.
  • 1 teaspoon vanilla. I eyeball this.
  • 1 pinch baking soda.
  • Pinch of salt
  • 1 1/2 cups all purpose flour.
  • 1 cup peanut butter.
  • Semi-sweet chocolate chips

Preheat your oven to 400 degrees. In your mixer combine bananas, yogurt, sugar, egg, vanilla, baking soda, salt, and flour.  Mix until well combined.  Add peanut butter.  Mix until combined.  Spoon into lined muffin tin.  Add chocolate chips.  Bake for 15-20 minutes.  Enjoy 🙂



Cookies N’ Cream Cupcakes

Remember when I said I had an amazing cupcake recipe for y’all?  Well here it is!

Cookies N’ Cream Cupcakes

photo 2(2) I start with a box mix as my base but don’t think that means these babies are ordinary!

For the batter:

  • One box Betty Crocker Milk Chocolate cake mix.
  • One box instant pudding.
  • Two tablespoons Hershey’s Cocoa Powder.
  • One cup sour cream. (trust me.)
  • Three eggs.
  • One and a quarter cup water.
  • Splash of vegetable oil.

Preheat oven to 350.  Line your cupcake tin with the liner of your choice and place a whole Oreo on the bottom.  In your Kitchenaid stand mixer combine cake mix, pudding mix, cocoa powder, sour cream, eggs, water, and oil.  Mix until creamy.  Once your batter is mixed completely spoon into cupcake tin.  Bake for 18-20 minutes or until the cake “bounces” back upon touch.

For the frosting:

  • Three cups of confectioners sugar.
  • One stick of butter, softened.
  • One or two tablespoons milk.
  • Vanilla Extract.
  • 12 whole Oreos, crushed.

In your stand mixer, combine confectioners sugar and butter until creamy.  Add milk till desired consistency is achieved.  Add vanilla extract for taste.  Fold in Oreos, but don’t over mix!  Spoon into frosting bag and frost your cupcakes!

Goodbye Winter Break!

And just like that winter break is officially over and I’m back to school.  How did it go by so quickly? I’m actually quite excited about my classes this semester so I don’t mind to much that it ended so quickly but shh don’t tell anyone that might make the semester seem longer!

I knew I needed to start my day off with a good stick to you ribs kinda breakfast and I knew the perfect meal to deliver that!  Oatmeal to the rescue!  Some plain oats, a sprinkle of brown sugar, a spoonful of pb, and some sliced banana made for a delicious breakfast.  photo 1(1)

2 classes down for this Wednesday afternoon and I was feeling some “me” time aka I wanted a manicure.  I popped into my favorite place and fulfilled my want!  I love the gel manicures so much, mostly because working retail you’re constantly banging into everything and your hands get pretty beat up but with gel it lasts through everything!  I’m a fan. This time I went with a brown-ish color called “Over the Taupe”  I’m not sure I’m digging it, what do y’all think? photo 3(1)Speaking of gel manicures, this morning while making breakfast I happened to catch some of the news and low and behold they where talking about gel mani’s and the dangers of getting them.  I was immediately intrigued because I honestly could not think of a reason that any aspect of the process would be dangerous.  Sure if they used dirty tools and you got some sort of infection that would be dangerous and down right gross but my salon is beyond clean, what could be the danger?  Turns out that little UV light you shove your hands in to to cure the gel is a mini tanning bed for you fingers.  I haven’t noticed my fingers getting any darker though haha! As with any UV light there comes the risk of skin cancer.  I stay out of tanning beds for that reason but I honestly never thought that little UV light at the nail salon could cause the same skin cancer as a giant tanning bed.  Hmm something for me to definitely think about when getting my mani’s from now on and some food for thought for you!

A Roasting Success!

Happy Martin Luther King Jr Day, everyone!  If you had the day off, yay for you I am sooo jealous!  Retail don’t care one bit about hoildays! haha! While it’s MLK JR day it’s also Inauguration Day! I’m not a fan of Obama, I’ve been raised Republican but I did really like one of his quotes from his Inaugural Address:

“Our journey is not complete until our gay brothers and sisters are treated like anyone else under the law – for if we are truly created equal, then surely the love we commit to one another must be equal as well.” -President Barack Obama”

I’m all about equality! But now on to what ya came here for, breakfast!  A never can go wrong with it yogurt bowl, well yogurt mug since I used my favorite Anthropolgie mug! photo 1Yoplait strawberry banana yogurt with a handful of Life cinnamon squares thrown in for some crunch!


I love roasted veggies but I had been getting sick of the plain Jane evoo with some salt and peppa variety so I was on the hunt for a way to spice them up.  Carrie over at Fitness and Frozen Grapes shared her way of doing it with me and I have to say the addition of cayenne pepper made these out of this world!  They where slammin’ good!  photo 3I roasted broccoli, cauliflower, mushrooms, zucchini, and carrots at 400 degrees for a half hour.  Before spreading them on a baking sheet to roast I tossed all of it in a bowl and covered it with a generous coating of EVOO, sea salt, pepper, cayenne pepper and some garlic salt.  They rocked my world.  And well because I had such a success roasting them I knew I had to incorporate these babies into lunch. Lunch today included my veggies, some Uncle Ben’s Ready Rice, and a salmon filet. Simple but out of this world! photo 5I love having fish in the middle of the day!  It’s out of the ordinary for me so it’s a nice change!
