Turkey and Feta Stuffed Peppers

It took me a little longer than I thought but I finally put one of my Pinterest recipes to use!  Turkey and feta stuffed peppers!  So good!  I’m glad I stumbled across this gem of a recipe. photo 1(16)

Turkey and Feta Stuffed Peppers

What you’ll need:

  • 4 large green bell peppers.  (I only used 2 peppers and have a ton of filling left over.)
  • 1.5 pound ground turkey.
  • 1 28-oz can diced tomatoes.
  • 2 tbsp. tomato paste.
  • 1 yellow onion, diced.
  • 1 tbsp olive oil.
  • 2 stalks celery, diced.
  • 2 tsp minced garlic.
  • 2 tsp dried oregano.
  • 1 tsp dried basil
  • 1/4 tsp red pepper flakes.
  • 2 tsp salt
  • 1 cup feta cheese.

How to make it:

Preheat oven to 350 degrees. Heat the olive oil over medium heat in a large skillet on the stove. Once hot, add the onion and celery, and saute for 5 minutes until soft. Add the minced garlic and continue sauteing for another minute. Turn the heat to high. Add the tomato paste to the skillet and mash the onions, celery and garlic together with the paste. Cook for three minutes, stirring continuously. Add the ground turkey and brown with the veggies. This should take about six minutes. Then, add the diced tomatoes, salt, basil, oregano and red pepper flakes. Bring mixture to a simmer and cook for about 15-20 minutes, until sauce reduces and isn’t as runny. Remove pan from heat and stir in the feta cheese. Place the green bell peppers on a tin foil-lined sheet tray. Fill each pepper with turkey and feta mixture. Once all peppers have been filled, cover peppers with a large piece of tin foil and seal. Bake peppers for 30 minutes. Enjoy!

Smoothie Time!

It might be January but it sure felt like summer today! And summer calls for one thing, I mean besides the beach and frozen cocktails…SMOOTHIES. Just like you won’t find me drinkin’ a hot mocha during the summer, I’m not one to drink smoothies in the cold of winter.  Thank you to the gorgeous So Cal weather for allowing me to enjoy my smoothie mid-winter.  Lunch was a fabulous smoothie, love the strawberry banana combo.  photo 3(6)

Strawberry Banana Summer Smoothie
  • scoop of yogurt (vanilla and strawberry combo for this girl.)
  • handful of frozen strawberries.
  • one banana broken in half.
  • splash of almond milk.

Blend everything in a blender till you achieve your desired consistency 🙂

Sooo…who’s excited for the Super Bowl?! This girl over here is!  Granted the Ravens and the 49-ers are not my favorite teams but I’m excited for this game. Ray Lewis gets a shot at his very last Super Bowl in his very last season. Colin Kapaernick took over mid-season as the 49ers QB and is leading them to a Super Bowl and last but not least, the Harbaugh brothers are facing off in the biggest game. It’s going to be a good game and I’m excited.  Besides you know the actual game the second best part of game day is the food and drinks! I’ve compiled a list of some of my favorite game day eats!

I’ll be celebrating the Super Bowl at a family friends house.  I’ll be guaranteed a good game, good food, good drinks, and great company!

S’mores Cookie Bars!

Holy cookie do I have an amazing recipe for you! If ya’ll haven’t noticed baking is my jam!

S’mores Cookie Bars

Whatchya’ll need:

  • 2 cups all purpose flour.
  • 2 cups graham cracker crumbs.
  • 1 teaspoon baking powder.
  • 1/4 teaspoon salt.
  • 2 sticks un salted butter, softened.
  • 1 1/2 cup lightly packed brown sugar.
  • 2 large eggs.
  • 2 cups Marshmallow Fluff
  • 2 bars Hershey’s Chocolate.

Preheat oven to 350 degrees.  Line a 9×13 inch pan with foil leaving a 2 inch overhang on the short sides.  Grease the foil and set it aside.  In medium bowl combine the flour, graham cracker crumbs, baking powder and salt.  In large bowl, using an electric mixer on medium speed beat butter and sugar until creamy.  Beat in eggs until well combined.  Slowly beat flour mixture into butter mixture.  Divide the dough in half.  Press half the dough into pan until dough is flat and pan is covered. Spread marshmallow fluff over the layer of dough.  Spread broken chocolate pieces over the fluff.  Scatter remaining dough over in clumps.  Bake until golden brown. 30-35 minutes.  Once cool, remove from pan, peel off foil and cut into bars.

Hey y’all!  Sorry for the lack of a post yesterday, lets just say being at school for 12 hours and then working till after midnight didn’t give me much time to blog let alone eat, basically I had a crepe with jam. Nutritious right?

Today is my day off all around. No school. No work.  Key the relaxation and staying in bed all day. Wrong.  Today has been actually on the busy side, but the good kind of busy! I started the morning off with a 2 mile run outside,  it’s finally not raining and warming up and I was itching for a run outside.  I had a good amount of errands to run and after showering off I headed out to start the day.  First a stop at my favorite place, Starbucks.

National Peanut Butter Day!

Happy National Peanut Butter Day y’all!  How are you guys celebrating? I’m celebrating by baking up my favorite Peanut Butter Chocolate Chip Banana Bread.  This stuff does not disappoint!  Great minds are thinking alike today because I’ve seen more than one PB Banana Bread recipe out there today, two of them come courtesy of two of my favorite bloggers, Carrie and Natalie!  Make sure you check those out! Today, one of my favorite coworkers and I both had the day off and decided to day trip it to the aquarium!  I love science and marine science has always been my favorite.  Before we left I made myself a filling lunch.  Ham and cheese sandwich on an Oro Wheat Sandwich thin.  In the sandwich was a squirt of mustard (love the stuff), laughing cow cheese, ham and tomato. A banana on the side for some sweetness.photo 1(3)I also enjoyed a hot chocolate at the aquarium to you know, keep me warm while outside 😉

After a solid two hours playing with the creatures of the ocean blue it was time to head home and I was starvin like Marvin.  Dinner tonight was comfort food at it’s finest.  A baked pasta casserole, homemade bread, and a salad. Nothing better.  The pasta casserole was out of this world good. Probably not the healthiest, but I’m willing to sacrifice 😉  My step dad is an amazing cook and I love when he makes dinner, especially because that means I don’t have too!

Peanut Butter Chocolate Chip Banana Bread/Muffins.

What you’ll need:

  • 3 or 4 ripened bananas, smashed well.
  • 3/4 cup plain greek yogurt. (Regular yogurt will work well too.)
  • 3/4 cup sugar.
  • 1 egg, beaten.
  • 1 teaspoon vanilla. I eyeball this.
  • 1 pinch baking soda.
  • Pinch of salt
  • 1 1/2 cups all purpose flour.
  • 1 cup peanut butter.
  • Semi-sweet chocolate chips

Preheat your oven to 400 degrees. In your mixer combine bananas, yogurt, sugar, egg, vanilla, baking soda, salt, and flour.  Mix until well combined.  Add peanut butter.  Mix until combined.  Spoon into lined muffin tin.  Add chocolate chips.  Bake for 15-20 minutes.  Enjoy 🙂
