They Sounded Good In The Beginning

I have a fabulous cupcake recipe to share with y’all today!  But first lets cover the basics, a workout and eats. Today during my early morning workout I suddenly got such an intense craving for scrambled eggs that I knew I needed them for breakfast!  Before we talk eats lets talk workout! I busted out an early morning work out this morning that felt amazing!  I started with 25 minutes on the elliptical and finished my cardio with a 15 minute run, okay okay slow jog!  I’ve been trying to incorporate more strength training so I rounded out my workout with this:

50 Jumping Jacks

20 Alt. Lunges with 10 lb weights

30 sec jump rope

10 tuck jumps

20 quats

30 sec jump rope

10 jump squats

10 burpees

20 mtn climbers

25 pushups

Repeat three times and I promise you’ll feel the burn! And now on to breakfast!

So I said I was craving eggs?  Well as soon as I got home I set out to make myself a delicious batch of scrambled eggs.  In the pan went 2 egg whites and one whole egg, some cut up tomatoes and a handful of mozzarella cheese.  And a side of toast with a jam smear of course!

I started eating and what do you know they just didn’t taste good.  I knew I was craving them at the gym but then they just didn’t satisfy me.  I ate maybe 3 bites of eggs and decided enough was enough.  I polished off the toast and gave the eggs to my cat, I know strange but my cat LOVES eggs!

Heath Bar Cupcakes

IMG_1032How good do those look?  They were a hit with my coworkers who have become my guinea pigs for all my baked goods, something tells me they don’t mind 😉 The recipe is simple and I’m telling you, make them for an event and everyone will love you!

What you’ll need:

Devils food cake mix (Holla at Betty Crocker)

Package instant chocolate pudding

1 cup sour cream

1 cup veggie oil

4 eggs

2 tsp. vanilla extract

2 tablespoons instant coffee dissolved in 1/2 cup warm water

1 cup? Toffee bits

Preheat oven to 350.  In your trust Kitchenaid stand mixer beat together the cake and pudding mixes, sour cream, oil, eggs, vanilla and coffee mixture. Beat till well combined and smooth.  Add in toffee bits (I usually eyeball this and pour till I’m satisfied with the amount).  Bake for 18-22 minutes.

I used a basic buttercream frosting and then dribbled some milk chocolate on top and added some more toffee bits but frost these babies however you’d like!
