Turkey and Feta Stuffed Peppers

It took me a little longer than I thought but I finally put one of my Pinterest recipes to use!  Turkey and feta stuffed peppers!  So good!  I’m glad I stumbled across this gem of a recipe. photo 1(16)

Turkey and Feta Stuffed Peppers

adapted from Eat, Live, Run

What you’ll need:

  • 4 large green bell peppers.  (I only used 2 peppers and have a ton of filling left over.)
  • 1.5 pound ground turkey.
  • 1 28-oz can diced tomatoes.
  • 2 tbsp. tomato paste.
  • 1 yellow onion, diced.
  • 1 tbsp olive oil.
  • 2 stalks celery, diced.
  • 2 tsp minced garlic.
  • 2 tsp dried oregano.
  • 1 tsp dried basil
  • 1/4 tsp red pepper flakes.
  • 2 tsp salt
  • 1 cup feta cheese.

How to make it:

Preheat oven to 350 degrees. Heat the olive oil over medium heat in a large skillet on the stove. Once hot, add the onion and celery, and saute for 5 minutes until soft. Add the minced garlic and continue sauteing for another minute. Turn the heat to high. Add the tomato paste to the skillet and mash the onions, celery and garlic together with the paste. Cook for three minutes, stirring continuously. Add the ground turkey and brown with the veggies. This should take about six minutes. Then, add the diced tomatoes, salt, basil, oregano and red pepper flakes. Bring mixture to a simmer and cook for about 15-20 minutes, until sauce reduces and isn’t as runny. Remove pan from heat and stir in the feta cheese. Place the green bell peppers on a tin foil-lined sheet tray. Fill each pepper with turkey and feta mixture. Once all peppers have been filled, cover peppers with a large piece of tin foil and seal. Bake peppers for 30 minutes. Enjoy!

Friday Five!

I’ve seen this trend pop up on a bunch of blogs I follow and I decided to use it as inspiration for today’s post!

1. If you watched The Grammys please tell me that you thought Justin Timberlake looked absolutely freaking adrorable! Not only did the eleven year old self in my squeal with excitement that he was indeed back, but I was also loving his new music. And he released his new song/video today.  It was totally my jam during my morning workout.

2.  It’s warming up over here on the west coast! It was almost 85 degrees today!  And if I didn’t have to work at 5 I would have totally would have spent the day at the beach!  I love cold weather from October to mid February and then after that I’m all about the summer weather!

3. Big changes are hopefully coming to me at work.  I have a big, no HUUUGE interview next Saturday and I’m hoping I nail it!  I don’t have many details but as soon as everything gets figured out I’ll obviously be sharing it!

4. Tonights dinner was bomb.com! You know those nights when you don’t really know what you’re going to make for dinner and then you just throw something together and it turns out amazing. Tonight was one of those nights. I had some shrimp in the freezer and I decided to make them scampi-ish style.  In a skillet I browned some garlic. After tossing in the shrimp I gave it a generous pour of white wine, added a mixture of spices including cayenne powder for a kick and some lemon and let it all cook till the shrimp were nice and brown. Served with some rice and a salad. Amazing. photo 1(15)

5.  Cheers to having the entire weekend off.  It’s been a long time since I’ve gotten to actually enjoy a true weekend.  I’m excited to lounge around, bake and get some laundry done!

Happy Valentines Day!  tumblr_mguu0yUdV11qbih6so1_500That basically sums up my day! Hah! I did receive two Valentines Day cards today…from my Mom and Grandma but hey a card is a card.

Sorry for the sporadic blogging the past couple days, I’ve been out of my mind crazy busy! So busy I haven’t worked out in 3 days. And you know what, I’m seriously missing the gym!  We’ve got a bunch to cover including a tasty pasta recipe so lets get right to it!



Turkey Pasta Fake Bake

I had some ground turkey that was about to go bad in the refrigerator and I thought tonight would be a perfect opportunity to make a pasta dish out of!  I started off by browning the pound of ground turkey and seasoning it. (I like my meat flavorful in pasta sauces.)  I seasoned it with salt, pepper, cayenne powder, garlic salt, and some season all salt. Yum.  After browning the meat I dumped a jar of marinara and some mushrooms into the pan with the meat.  On the side I boiled some rigatoni.  After the pasta and sauce were done I combined both topped with cheese and popped it under the broiler for about 10 minutes.  Quick and easy!  After spooning myself some I topped with more cheese because well, who doesn’t love cheese?


To make:

  • 1 box rigatoni pasta
  • 1 pound ground turkey (beef would work too)
  • 1 jar of your favorite past sauce
  • 1 cup mushrooms (or any veggie you prefer)
  • 1 cup shredded mozzarella cheese.

In skillet brown ground turkey and season to desired taste.  Add sauce and mushrooms once the meat is brown.  In another pot boil water and cook pasta.  Once the pasta is al dente and the sauce is heated throw combine the sauce and noodles in the skillet.  Top with mozzarella cheese. Place under the preheated broiler for approximately 10 minutes.  Serve with more cheese if desired.



And in Bachelor news…Tierra is outa here! I was so glad that Sean finally saw what all of us have been seeing and sent that girl packing!  His sister is right…if a girl can not get along with other girls there is something wrong!  After AshLee’s one-on-one with Sean I was really warming up to her! I was sooo surprised when he gave Lindsay the rose on the group date, I feel like we saw no interaction between them and the Desi should have gotten the rose.  It’s also hard to believe Lindsay is the homegirl who rocked the wedding dress on the first night! I’m still rooting for Lesley!  And also starting to really like Catherine.  We’re in the final stretch, bring on the hometowns!

TGI Friday’s on Friday

Irony right?  I feel like I never go to TGI Friday’s on an actual Friday, it’s usually Sunday or some random week night. But last night we settled on some amazing happy hour there.  If you’ve never been to happy hour there its basically the jam, all appetizers are half price and full mugs of beer are $3.50. Bomb.

I went with 2 appetizers that are part of their Right Portion Right Price selection.  BBQ chicken flatbread pizza photo 1(12)and shrimp cocktail photo 2(11)Simple but out of this world good.  I couldn’t leave without ordering one of their delicious desserts though, I mean I was enjoying my night out so why not!  Strawberry Shortcake=phenomenal.photo 3(8)Lets just say I left feeling very, very full!



Breakfast was an old stand by. TJ’s waffles with lite syrup and a cup of coffee on the side.  photo 4(3)I ate half a cup of strawberry yogurt while I waited for my waffles to toast. Simple breakfast but it totally hit the spot.

National Peanut Butter Day!

Happy National Peanut Butter Day y’all!  How are you guys celebrating? I’m celebrating by baking up my favorite Peanut Butter Chocolate Chip Banana Bread.  This stuff does not disappoint!  Great minds are thinking alike today because I’ve seen more than one PB Banana Bread recipe out there today, two of them come courtesy of two of my favorite bloggers, Carrie and Natalie!  Make sure you check those out! First things first, eats and the aquarium!


Today, one of my favorite coworkers and I both had the day off and decided to day trip it to the aquarium!  I love science and marine science has always been my favorite.  Before we left I made myself a filling lunch.  Ham and cheese sandwich on an Oro Wheat Sandwich thin.  In the sandwich was a squirt of mustard (love the stuff), laughing cow cheese, ham and tomato. A banana on the side for some sweetness.photo 1(3)I also enjoyed a hot chocolate at the aquarium to you know, keep me warm while outside 😉

After a solid two hours playing with the creatures of the ocean blue it was time to head home and I was starvin like Marvin.  Dinner tonight was comfort food at it’s finest.  A baked pasta casserole, homemade bread, and a salad. Nothing better.  The pasta casserole was out of this world good. Probably not the healthiest, but I’m willing to sacrifice 😉  My step dad is an amazing cook and I love when he makes dinner, especially because that means I don’t have too!

Peanut Butter Chocolate Chip Banana Bread/Muffins.


What you’ll need:

  • 3 or 4 ripened bananas, smashed well.
  • 3/4 cup plain greek yogurt. (Regular yogurt will work well too.)
  • 3/4 cup sugar.
  • 1 egg, beaten.
  • 1 teaspoon vanilla. I eyeball this.
  • 1 pinch baking soda.
  • Pinch of salt
  • 1 1/2 cups all purpose flour.
  • 1 cup peanut butter.
  • Semi-sweet chocolate chips

Preheat your oven to 400 degrees. In your mixer combine bananas, yogurt, sugar, egg, vanilla, baking soda, salt, and flour.  Mix until well combined.  Add peanut butter.  Mix until combined.  Spoon into lined muffin tin.  Add chocolate chips.  Bake for 15-20 minutes.  Enjoy 🙂



That is going to be a PR nightmare…

It might just be because I LOOOVE sports but this week I’ve been captivated by the saga of Lance Armstrong and the story of Manti Te’o and his “girlfriend”.  In case you live under a rock have a lot going on in your life and aren’t up to speed let me give you a brief synopsis. Lance, who for year has denied doping, is finally coming clean on using performance enhancing drugs to help him win his Tour De France victories. Manti Te’o, a linebacker for the Notre Dame Fighting Irish, has opened up to the media about falling victim to a hoax in which his girlfriend, who supposedly died from Leukemia in October, never existed. Okay, I suck at summing it up. Google it and you’ll get links for days telling you the whole story.  I have to say this has got to be one of the cruelest, twisted, saddest, and confusing stories I have ever heard.  I mean talk about some hoax, right?  According to ND Manti is a victim, but this has got to be a nightmare for them, he captured so many hearts after the story broke of losing his girlfriend and then playing a phenomenal game.  I’m sure they’re over there trying to figure out how to sort this out.  Also, I’m super curious to see what else comes to light in the coming weeks and if Manti had anything to do with it to boost his name (I like to believe all people are good and that he DID NOT do this to get his name out there and that he is merely a victim of a sick joke.) And now back to you regular scheduled blogging…

Sloppy Joe’s and a special visit!

Happy Friday everyone!  Today was originally suppose to be my day off but with a scheduled visit from the Nordstrom brothers themselves it was all hands on deck and I ended up working a mid shift!  I started the day with a nice and sweaty run.  It’s finally warming up around here, it was down in the low 30’s in the mornings, and an outdoor run was calling to me!  I covered a little under 3 miles in about a half hour!  I’m trying to work up to covering farther distances but I’m nervous to push myself to far as I don’t want to re injure myself!  Breakfast was an un-photographed honey Chobani with a banana on the side!  Simple yet good.  I knew I’d be off early enough to make myself a good dinner tonight and I brainstormed some ideas while working.  Sloppy Joes kept popping up in my head and I knew I needed to make them!  They always remind me of my childhood as my family would eat them at least once a week! For tonight’s sloppy joes I adapted a recipe from Julie and made it my own!  In the pan went half an onion and a pound of ground beef.  I cooked it until all the meat was browned.  A little grease drainage after and it was time to make them sloppy joes.  I added salt, pepper, paprika, garlic salt and a small spoonful of brown suger, a splash of apple cider vinegar and some ketchup!  Delish!

Served with a side of chipotle Alexia sweet potato fries and some un-pictured carrots I ate!  Plans for the rest of the evening include whipping up a batch of oreo dream cupcakes and catching up on a bunch of DVR’d shows, mainly the Bachelor! Team Kacie B! Enjoy your night friends!

Adapted Sloppy Joes

  • 1 pound ground beef
  • 1/2 onion, chopped
  • Spice mixture (choose YOUR favorites)
  • 1/2 cup apple cider vinegar
  • squirt of ketchup

Brown onions and beef, drain grease.  On low heat add spices, apple cider vinegar, ketchup. Mix until all combined. Enjoy!

Dinner tonight was g-o-o-d!  I’m the worlds biggest seafood fan and I love salmon!  Can you guess what was the star of my dinner tonight?  Yep, salmon!  I baked a single salmon filet seasoned in with salt, pepper and some Mrs. Dash table blend in the oven.  I also roasted some broccoli that I tossed in some olive oil, sea salt and garlic powder.  To bring the whole dish together I microwaved a bag of Trader Joe’s brown rice and used half the bag to round out my salmon bowl. Everything combined doesn’t look so appealing to the eyes but I promise you it was delicious!  I’m pretty sure I could eat some variation of this bowl on the daily.  I’ll either switch out my broccoli for another veggie or trade the salmon for a different fish and I’d seriously never know I was eating this meal for every meal!  Oh! and speaking of Trader Joe’s…okay I spoke of it awhile ago but tonight I did my grocery shop and I happened upon this…Pumpkin pancake mix!  Sure it might still be 90 degrees out but I’ll be getting into the fall spirit with these cakes this weekend!  Pumpkin anything always reminds me of fall.  I seriously think the day Starbucks brings back pumpkin spice each year (which is always the day after labor day in case you were wondering) should be some sort of holiday!  I’ll definitely be incorporating pumpkin into more of my food items this fall and I’ll be sure to post some delicious recipes!
Now for the workout! Bet you thought I didn’t go tonight, huh?  Well I did. 3 miles tonight!  I am having a serious problem with the pain in my calves and tonight’s run was challenging.  Truth be told, I felt good during the run.  I wasn’t tired or dying to stop but the pain in my calves kept me from going at my full potential.  I’ve ambushed just about every employee at 24 hour fitness in hopes that one of them might be able to help me with my problem and they all seem to have the same answers: Foam Roll and Stretch!  Tonight however the front desk guy said I might want to look into sports physical therapy, and if the pain doesn’t get better I just might do that!  And I’ll leave you with mah stats from tonight….

Oh My Lanta! My Calves are on fire!

Tonights run was a toughie!  I thought I was never going to hit two miles and I was pretty darn certain my calves were going to burst into flames at any moment!  But before I cover the workout, lets do dinner?

Like I said before, I work retail which means working whack job hours.  For example, I didn’t leave my store tonight till 10 p.m which also means no cooking meals at home for me!  Yes, I do know I can pack a lunch but I somehow always find myself rushing to run out the door to work and I can’t seem to throw something together and I lack a lunchbox currently.  Have no fear though, my goal for next week is to pack a meal every day!  Okay, so I’m going to try my hardest because with moving and everything else going on my world is going to be a tad crazy! Today’s dinner was absolutely fabulous and satisfied every single one of my taste buds.  Half of a mozzarella prosciutto sandwich and a side salad topped with the best balsamic vinaigrette dressing you will ever have from the cafe in my store!

You might have already guessed this but yes I do work at Nordstrom!  I love the cafe and I always try to choose a healthy option for my meals, for example: a half sandwich and half salad or a cup of soup and half salad.  Their tomato basil soup is on point!  Now on to my run! The second day of training is a shorter two mile run and by all heaven was I glad it was only two miles.  I have never felt pain in my calves like I did tonight.  It made the run extra challenging and my time a little slower.  The whole time I was running I kept repeating mantra’s in my head, my favorite being “It’s okay to feel uncomfortable” which I got from Julie.  I guess I was trying to make myself think the pain I was in was just me being uncomfortable, but sadly it was just straight up pain!  But what ever gets me through the run, right?!  I promised I would remember to take a picture of my stats and guess what!  I remembered! About a 12 minute mile, not to shabby for the immense pain I was feeling in my calves!  I’m hoping to find some miraculous cure for this issue, so if any of y’all know something holla at your girl so I can get back to running my 9:30-10 minute miles!  Wow, this issue is slowin me down!  But seriously, holla if you know of some way I can make this problem go poof!  Goodnight y’all, see ya in the mornin!
