Does anyone else hate the elliptical? No okay so it’s just me then. Before I get to this situation let me tell you about the most amazing Chinese chicken salad I’ve ever had. No this salad wasn’t from some 5 star gourmet restaurant it was from Nordstrom cafe and it was out of this world good! The base of the salad was your standard mixed greens mix, the dressing was a sweet Asian balsamic vinaigrette, on top of the salad was baby mandarin oranges, slivered almonds, carrots slices and sliced red bell pepper and plenty of those crunchy things that come standard on Chinese chicken salad. AMAZING. Oh, and chicken of course!
I haven’t always hated the elliptical. This is a relatively new thing…well new as in the past year-ish. In highschool I was all about the elliptical, I’d get on that thing and go for an hour and I’d be content with the workout but lately any time I get on the elliptical I get bored within 3 minutes and end up switching to the treadmill. I’m not sure if it’s the runner in me, as this is also a new thing, but I just am not content with a elliptical workout? Do any of y’all have that problem? I’d really really love your suggestions!
Happy National Pancake Day! I didn’t celebrate with free pancakes at IHOP, actually I didn’t even have pancakes today so I hope you got to enjoy them for me 🙂

I was fortunate enough to have two days off in a row this week! Holla! Thank you Nina 😉 Breakfast today consisted of oatmeal and a cup of coffee. I stirred in some frozen strawberries to give my oatmeal some pizzaz! After breakfast I headed to the gym for a super sweaty workout. I started on the treadmill with this workout:

Honestly, I was never one who changed up my treadmill workouts. I would set it at 6.0 or 6.5 and then run. After my injury I wasn’t able to run fast or for very long and I found that changing up my the speeds lets me run farther for longer. I am a fan.
It’s one gorgeous day over here and I took full advantage of the summer like weather to bust out the barbeque and grill up some chicken and veggies. I marinated the chicken, during breakfast and while at the gym, in balsamic vinaigrette and popped it on the grill. Along side I tossed some zucchini in olive oil, salt and pepper and put that on the grill alongside the chicken. I microwaved some left over rice I had from dinner last night. Delish. Some Naked juice was enjoyed alongside! I usually don’t get to have such a large lunch, in fact I usually don’t get to enjoy lunch at home, so this was a real treat and an awesome start to my weekend! Hope ya’ll having an awesome Friday!

It might be January but it sure felt like summer today! And summer calls for one thing, I mean besides the beach and frozen cocktails…SMOOTHIES. Just like you won’t find me drinkin’ a hot mocha during the summer, I’m not one to drink smoothies in the cold of winter. Thank you to the gorgeous So Cal weather for allowing me to enjoy my smoothie mid-winter. Lunch was a fabulous smoothie, love the strawberry banana combo.
Strawberry Banana Summer Smoothie
- scoop of yogurt (vanilla and strawberry combo for this girl.)
- handful of frozen strawberries.
- one banana broken in half.
- splash of almond milk.
Blend everything in a blender till you achieve your desired consistency 🙂
Sooo…who’s excited for the Super Bowl?! This girl over here is! Granted the Ravens and the 49-ers are not my favorite teams but I’m excited for this game. Ray Lewis gets a shot at his very last Super Bowl in his very last season. Colin Kapaernick took over mid-season as the 49ers QB and is leading them to a Super Bowl and last but not least, the Harbaugh brothers are facing off in the biggest game. It’s going to be a good game and I’m excited. Besides you know the actual game the second best part of game day is the food and drinks! I’ve compiled a list of some of my favorite game day eats!

Hey y’all! Sorry for the lack of a post yesterday, lets just say being at school for 12 hours and then working till after midnight didn’t give me much time to blog let alone eat, basically I had a crepe with jam. Nutritious right?
Today is my day off all around. No school. No work. Key the relaxation and staying in bed all day. Wrong. Today has been actually on the busy side, but the good kind of busy! I started the morning off with a 2 mile run outside, it’s finally not raining and warming up and I was itching for a run outside. I had a good amount of errands to run and after showering off I headed out to start the day. First a stop at my favorite place, Starbucks.

Sooo not healthy, but sooo good! I hit up Target for some necessities but somehow ended up with oh, way more crap then I needed, or want. Does anyone else feel this way too? I swear I can’t go to Target and buy just one thing. Please tell me I’m not crazy!!

Happy Martin Luther King Jr Day, everyone! If you had the day off, yay for you I am sooo jealous! Retail don’t care one bit about hoildays! haha! While it’s MLK JR day it’s also Inauguration Day! I’m not a fan of Obama, I’ve been raised Republican but I did really like one of his quotes from his Inaugural Address:

I’m all about equality! But now on to what ya came here for, breakfast! A never can go wrong with it yogurt bowl, well yogurt mug since I used my favorite Anthropolgie mug! Yoplait strawberry banana yogurt with a handful of Life cinnamon squares thrown in for some crunch!
I love roasted veggies but I had been getting sick of the plain Jane evoo with some salt and peppa variety so I was on the hunt for a way to spice them up. Carrie over at Fitness and Frozen Grapes shared her way of doing it with me and I have to say the addition of cayenne pepper made these out of this world! They where slammin’ good! I roasted broccoli, cauliflower, mushrooms, zucchini, and carrots at 400 degrees for a half hour. Before spreading them on a baking sheet to roast I tossed all of it in a bowl and covered it with a generous coating of EVOO, sea salt, pepper, cayenne pepper and some garlic salt. They rocked my world. And well because I had such a success roasting them I knew I had to incorporate these babies into lunch. Lunch today included my veggies, some Uncle Ben’s Ready Rice, and a salmon filet. Simple but out of this world! I love having fish in the middle of the day! It’s out of the ordinary for me so it’s a nice change!

Question for you: How do you roast veggies?
I’m popping in a little earlier than usual today to share lunch and an update about Self Esteem: Sunday. Remember, I was trying to give up focusing on my weight as a number and focus more on how I’m feeling, it’s been four days and I’m ready to give ya’ll an update. But first, lets talk everyone’s favorite subject: food! It’s been awhile since I had fish for any meal and because I’m at my parents before work this afternoon I decided to take full advantage of the fish sittin in the freezer! I decided to have a bigger lunch than usual and make use of the veggies in the fridge! I seasoned a salmon filet with salt, pepper, garlic powder and some Mrs. Dash. On the side I tossed broccoli in olive oil and garlic salt and popped both of them in the oven for 15 minutes. I love mushrooms and because my parents had them in the refrigerator I decided to make the best of them and throw em in the mix. I sauteed them on the stove with some Worcestershire sauce! To round it out, a small spooning of jasmin rice that I clearly forgot to take with me. Lunch was satisfying! That nasty looking stone thing my plate is sitting on would be my pizza stone and I promise I’m trying to get better at taking photos!
Self Esteem Sunday: Update
I decided to give up on the scale to focus more on how I was feeling rather than the number on the scale which honestly was becoming discouraging because the number wasn’t going down as much as I’d like even though I was feeling fantastic! I would love to be able to report back and say “I did not get on the scale once since Sunday” but I believe in being completely honest with y’all and I have to admit: I got on the scale last night. I had a fabulous workout and I was feeling great so I thought whats the problem with just hoppin’ on to see the number. I am happy to report though that while the number hasn’t moved, it’s actually gone up I reminded myself that I was feeling fantastic and I didn’t let it affect my mood. I also remembered what Carrie told me: that I was going to increase muscle mass because I need muscle to run 13.1 miles and muscle “weighs” more than fat. So, after all this rambling I’d say this has been a success but I’m not satisfied just going four days. I’ll be back on Sunday with another update on how my whole week without the scale is going.
