Gorgeous Friday!

Happy Friday to y’all! It’s another gorgeous day over here in California.  For all y’all dealing with cold and snow…I wish I could bottle up the sunshine and send it your way!

 

I was fortunate enough to have two days off in a row this week! Holla! Thank you Nina 😉 Breakfast today consisted of oatmeal and a cup of coffee.  I stirred in some frozen strawberries to give my oatmeal some pizzaz! After breakfast I headed to the gym for a super sweaty workout.  I started on the treadmill with this workout:  photo(7)

Honestly, I was never one who changed up my treadmill workouts.  I would set it at 6.0 or 6.5 and then run. After my injury I wasn’t able to run fast or for very long and I found that changing up my the speeds lets me run farther for longer.  I am a fan.

It’s one gorgeous day over here and I took full advantage of the summer like weather to bust out the barbeque and grill up some chicken and veggies.  I marinated the chicken, during breakfast and while at the gym, in balsamic vinaigrette and popped it on the grill.  Along side I tossed some zucchini in olive oil, salt and pepper and put that on the grill alongside the chicken.  I microwaved some left over rice I had from dinner last night. Delish. photo 3(7)Some Naked juice was enjoyed alongside!  I usually don’t get to have such a large lunch, in fact I usually don’t get to enjoy lunch at home, so this was a real treat and an awesome start to my weekend! A Terrific Tuesday!

Hey y’all!  Sorry for the lack of a post yesterday, lets just say being at school for 12 hours and then working till after midnight didn’t give me much time to blog let alone eat, basically I had a crepe with jam. Nutritious right?

Today is my day off all around. No school. No work.  Key the relaxation and staying in bed all day. Wrong.  Today has been actually on the busy side, but the good kind of busy! I started the morning off with a 2 mile run outside,  it’s finally not raining and warming up and I was itching for a run outside.  I had a good amount of errands to run and after showering off I headed out to start the day.  First a stop at my favorite place, Starbucks.

Sooo not healthy, but sooo good! I hit up Target for some necessities but somehow ended up with oh, way more crap then I needed, or want. tumblr_md4ustAItu1qh5n42o1_500Does anyone else feel this way too?  I swear I can’t go to Target and buy just one thing.  Please tell me I’m not crazy!!

That is going to be a PR nightmare…

It might just be because I LOOOVE sports but this week I’ve been captivated by the saga of Lance Armstrong and the story of Manti Te’o and his “girlfriend”.  In case you live under a rock have a lot going on in your life and aren’t up to speed let me give you a brief synopsis. Lance, who for year has denied doping, is finally coming clean on using performance enhancing drugs to help him win his Tour De France victories. Manti Te’o, a linebacker for the Notre Dame Fighting Irish, has opened up to the media about falling victim to a hoax in which his girlfriend, who supposedly died from Leukemia in October, never existed. Okay, I suck at summing it up. Google it and you’ll get links for days telling you the whole story.  I have to say this has got to be one of the cruelest, twisted, saddest, and confusing stories I have ever heard.  I mean talk about some hoax, right?  According to ND Manti is a victim, but this has got to be a nightmare for them, he captured so many hearts after the story broke of losing his girlfriend and then playing a phenomenal game.  I’m sure they’re over there trying to figure out how to sort this out.  Also, I’m super curious to see what else comes to light in the coming weeks and if Manti had anything to do with it to boost his name (I like to believe all people are good and that he DID NOT do this to get his name out there and that he is merely a victim of a sick joke.) And now back to you regular scheduled blogging…

Sloppy Joe’s and a special visit!

Happy Friday everyone!  Today was originally suppose to be my day off but with a scheduled visit from the Nordstrom brothers themselves it was all hands on deck and I ended up working a mid shift!  I started the day with a nice and sweaty run.  It’s finally warming up around here, it was down in the low 30’s in the mornings, and an outdoor run was calling to me!  I covered a little under 3 miles in about a half hour!  I’m trying to work up to covering farther distances but I’m nervous to push myself to far as I don’t want to re injure myself!  Breakfast was an un-photographed honey Chobani with a banana on the side!  Simple yet good.  I knew I’d be off early enough to make myself a good dinner tonight and I brainstormed some ideas while working.  Sloppy Joes kept popping up in my head and I knew I needed to make them!  They always remind me of my childhood as my family would eat them at least once a week! For tonight’s sloppy joes I adapted a recipe from Julie and made it my own!  In the pan went half an onion and a pound of ground beef.  I cooked it until all the meat was browned.  A little grease drainage after and it was time to make them sloppy joes.  I added salt, pepper, paprika, garlic salt and a small spoonful of brown suger, a splash of apple cider vinegar and some ketchup!  Delish!

Served with a side of chipotle Alexia sweet potato fries and some un-pictured carrots I ate!  Plans for the rest of the evening include whipping up a batch of oreo dream cupcakes and catching up on a bunch of DVR’d shows, mainly the Bachelor! Team Kacie B! Enjoy your night friends!

Adapted Sloppy Joes

  • 1 pound ground beef
  • 1/2 onion, chopped
  • Spice mixture (choose YOUR favorites)
  • 1/2 cup apple cider vinegar
  • squirt of ketchup

Brown onions and beef, drain grease.  On low heat add spices, apple cider vinegar, ketchup. Mix until all combined. Enjoy!

They Sounded Good In The Beginning

I have a fabulous cupcake recipe to share with y’all today!  But first lets cover the basics, a workout and eats. Today during my early morning workout I suddenly got such an intense craving for scrambled eggs that I knew I needed them for breakfast!  Before we talk eats lets talk workout! I busted out an early morning work out this morning that felt amazing!  I started with 25 minutes on the elliptical and finished my cardio with a 15 minute run, okay okay slow jog!  I’ve been trying to incorporate more strength training so I rounded out my workout with this:

50 Jumping Jacks

20 Alt. Lunges with 10 lb weights

30 sec jump rope

10 tuck jumps

20 quats

30 sec jump rope

10 jump squats

10 burpees

20 mtn climbers

25 pushups

Repeat three times and I promise you’ll feel the burn! And now on to breakfast!

So I said I was craving eggs?  Well as soon as I got home I set out to make myself a delicious batch of scrambled eggs.  In the pan went 2 egg whites and one whole egg, some cut up tomatoes and a handful of mozzarella cheese.  And a side of toast with a jam smear of course!

I started eating and what do you know they just didn’t taste good.  I knew I was craving them at the gym but then they just didn’t satisfy me.  I ate maybe 3 bites of eggs and decided enough was enough.  I polished off the toast and gave the eggs to my cat, I know strange but my cat LOVES eggs!

Heath Bar Cupcakes

IMG_1032How good do those look?  They were a hit with my coworkers who have become my guinea pigs for all my baked goods, something tells me they don’t mind 😉 The recipe is simple and I’m telling you, make them for an event and everyone will love you!

What you’ll need:

Devils food cake mix (Holla at Betty Crocker)

Package instant chocolate pudding

1 cup sour cream

1 cup veggie oil

4 eggs

2 tsp. vanilla extract

2 tablespoons instant coffee dissolved in 1/2 cup warm water

1 cup? Toffee bits

Preheat oven to 350.  In your trust Kitchenaid stand mixer beat together the cake and pudding mixes, sour cream, oil, eggs, vanilla and coffee mixture. Beat till well combined and smooth.  Add in toffee bits (I usually eyeball this and pour till I’m satisfied with the amount).  Bake for 18-22 minutes.

I used a basic buttercream frosting and then dribbled some milk chocolate on top and added some more toffee bits but frost these babies however you’d like!

It’s Tuesday?

When I thought of the title of this post I seriously typed “Monday Funday” into the subject bar and then thought that can’t be right. Clearly it’s been a long day, but a good day! And it’s Tuesday not Monday which means one day closer to Friday 🙂 Before I tell you about my delicious dinner let’s rewind to last night! I ended up meeting up with 3 of my close friends for an ice cream date around 9.  I told y’all I live for ice cream and froyo.  After devouring eating our ice cream we all decided it was a perfect night for a spontaneous hike.  Yes, I said hike. and yes it was 10 p.m.  If you’ve never been on a night hike I recommend you round up the troops and plan one ASAP.  They’re amazing.  Especially when you reach the top and look out at all the city lights.  Personally I’m a city lights type of girl, I’d take that view over an ocean view any day. Call me crazy, it’s cool.  Anyway, we ended up at the top of this hill and the view was breath taking.  The hike itself wasn’t hard, I was breathing deeply when we got to the top though.  The climb was pretty much vertical to the top.  Okay, I’m exaggerating but it was pretty steep! Look at this view…and this view…Loved the spontaneous adventure with my friends!  We’re definitely going to have to make night hikes more of a weekly thing! 🙂

 

But now lets move on to today, which is Tuesday in case you’re like me and forget the days of the week! I opened this morning at work and knew I had dinner plans this evening so I started the day with an early morning gym sesh.  3.5 miles for me! It’s back to pain in my calves, not unbearable as it has been but pretty stinkin’ painful.  I just ordered a pair of compression sleeves off Amazon and I’m hoping those will help with the pain!  Breakfast this morning was an old standby…yogurt, in the car as I drove to work.Yogurt for breakfast is always delish 🙂  But now let me tell you about this AMAZING place I had dinner at tonight!  I met up with an old friend from high school who I hadn’t seen in oh, two years.  She chose the place we were going to and I was excited to try something new.  Gyu-Kaku is where we ended up.  Don’t ask me the correct pronunciation of the name because I have no clue!  The restaurant is korean?  I think and you sit at tables with grills in the middle and cook your own food. That isn’t our table but it’s exactly how it looked and now you’ll get the full picture!  We ordered garlic noodles as an appetizer and split them.  For our main course we ordered two different types of beef, one more think and the other more like bacon, garlic shrimp, and zucchini.  They bring the food to you raw and you’re in charge of cookin’ it up!  It’s such a fun atmosphere and cooking really opens up the conversation, not that we were struggling, but there’s just something about cooking that brings out conversation.  It’d be a great place for a date!  We plowed through our food and decided to treat ourselves to some dessert!  It was girls night out, why not!  I failed to snap photo’s of our actual food as I was to involved in conversation but remembered for dessert.  We ordered smore’s to cook over the fire! Yum! This place was seriously so fun and I can’t wait to go back!  I’m off to bed, early workout on the books tomorrow!  See ya in the a.m!

What I’m Lovin’ Wednesday

It’s back again this week!  What I’m lovin’ Wednesday! But before I get to what I’m lovin’ lets cover the blog basics…you know food, my workout all that jazz!  I ate an early dinner tonight and when I say early I’m talking 4 o’clock early.  I didn’t intend to eat this early and usually I’d be starving around 8 but I’m still surprisingly full but with everything I had to accomplish on my day off that was just how the cookie crumbled.  I met my friend Adam for lunch at Corner Bakery, a chain restaurant thats super popular over here in So Cal.  I was flip-flopping between a the Santa Fe Ranch Salad and a half panini with mac and cheese.  I decided to go with the panini and mac and cheese and I was super satisfied.  In bad blogger fashion I forgot to snap a picture but that’s before I inhaled my morning meal.  Sorry!  Before my workout I met up with my friend Shannon for some froyo! It’s still mega hot out in So Cal so some cold goodness was just what I was craving. Pistachio froyo with cap’n crunch cereal, brownies and gummy worms fo me please!

I don’t think I’ll ever get sick of frozen yogurt. Believe me, I’m surprised I haven’t turned into yogurt with the amount of it I consume.  Sadly though, froyo and a workout aren’t a good combination.  Running two miles on a belly full of froyo is not the business. I did however manage to push through and get in a great workout!

After my run I hit up the weight room for some strength training!  I jumped around on a variety of machines and managed to bust out an additional 30 minutes down there!  Have I mentioned yet how glad I am to be back in the swing of things after being sick?  It feels AMAZING to sweat again!

 

What I’m Lovin’ Wednesday

In honor of the first week of October and what I consider to be the official kick off of the holiday season (I love them so much I like to celebrate for 3 whole months) you know I’m lovin the fact that I can start decorating!  I picked up a baby pumpkin at Trader’s Monday and it’s now sitting so cute and fall-y on my table!  I can’t wait for my pumpkin carving party!

I’m planning to make a run to Target before work tomorrow to stock up on some decorating essentials for the season!

 

Even though it happened on Saturday, I’m still loving the fact that I got to spend Saturday night with my best friend of 17 years celebrating her 21st birthday at one of the best concerts I’ve ever been too! I’m so thankful this girl is apart of my life, and I’m so thankful we get to do super fun things like this!  I don’t know what I would do without these moments!

 

and the third thing I’m loving, a successful season for both my teams!  Did you seriously think I was going to leave a football reference out of this post? I think I’ve told y’all I’m a HUGE football fan, I seriously turn into a boy for the 16 weeks of the season.  I’m a Charger fan by default because I live in Southern California and I’m a Bronco’s fan because I LOVE Peyton Manning!  Both of my teams are starting out strong and I’m totally hoping for one of them to make a super bowl appearance.  I’m also totally stoked that both of them have beaten the Raiders 😉 37 was the magical number this Sunday 🙂  What’s your favorite team?  I’d love to hear who you guys root for!  This girl is off to bed because I have a 3 mile run on the books at 5 am tomorrow!  See ya around breakfast time!

I’ve got a case of the Monday’s.

Sorry for coming atchya with such a late blog post but today was just well…a Monday. My day just started off crappy.  My apartment complex lacks adequate parking which leaves me to park on the street and whatdya know, my car gets broken into.  What a way to start my day, no?  I’ve had experience with car burglars before.  Last November my car was also broken into while I played soccer with my friend Daniel at my old high school.  Cars and I don’t do to well. I spent the morning rushin around, cancelling credit cards, calling the DMV…you know all the fun stuff that goes along with getting your car broken into.  But, never fear my day got a little bit better when I decided to treat myself to a mani pedi! In the spirit of October 1st and what I consider to be the first official day of fall I went with the traditional deep purple…Do you coordinate nail polish colors with the season?  It might be my slight OCD but I always do.  I always find myself choosing deep colors in fall, pastels in spring and bright neons in summer. Maybe my fall colored nails will bring fall weather?  Seriously though it was 86 today! When am I going to get my cold weather!  Today was also my day off which meant a lunch date with my friend Camille, you know the one from Go Fest.  I crave sushi like nobody’s business.  I’m honestly horrified by the thought that I will not be able to indulge in it when I’m pregnant (in the very far future of course.)  I had the  hot night roll which is basically, if you’re knowledgeable in the sushi category, a crunch roll with spicy tuna on top.Yummy in my tummy! Just looking at this picture makes me want another one!
I’m so glad I’m back to my normal gym routine.  It’s crazy how much I actually missed working out while I was sick.  I guess once you get into a workout routine and then have to take an unscheduled week off it throws your body for a loop.  Tonight on the training schedule was stretch and strengthen.  I started out on elliptical for 10 minutes but got annoyed/bored when I realized Monday Night Football was playing on the TV’s above the treadmills.  I took initiative and decided it was time for a run so I could catch the end of the Cowboys Bears game.  I ran a mile which equaled 10 minutes because I didn’t want to run to far tonight because I have a three mile run tomorrow I then moved downstairs for 10 minutes on the stair master.  I just couldn’t get focused on a machine tonight, I was all over the place.  After my 30 minutes of cardio I moved to the Group X room for some circuit training.  Because I am clearly the worlds biggest clutz I tripped as I walked into the room and ate it in front of everyone in there, which I personally think was a high number of people for a Monday night.  The Monday’s strike again.  My circuit workout was quick and got me extra sweaty.  It looked like this:

50 Jumping Jacks

20 squats
10 burpees (death)
60 sec jump rope
20 second mtn climbers
25 pushups
75 crunches
50 leg lifts

Repeat that three times and you’ve got yourself a super sweaty circuit workout! I’m about to hop in the shower and then get to bed early.  I’m hoping tomorrow is a MUCH better day than today.  Happy first week of October y’all 🙂

Oh My Lanta! My Calves are on fire!

Tonights run was a toughie!  I thought I was never going to hit two miles and I was pretty darn certain my calves were going to burst into flames at any moment!  But before I cover the workout, lets do dinner?

Like I said before, I work retail which means working whack job hours.  For example, I didn’t leave my store tonight till 10 p.m which also means no cooking meals at home for me!  Yes, I do know I can pack a lunch but I somehow always find myself rushing to run out the door to work and I can’t seem to throw something together and I lack a lunchbox currently.  Have no fear though, my goal for next week is to pack a meal every day!  Okay, so I’m going to try my hardest because with moving and everything else going on my world is going to be a tad crazy! Today’s dinner was absolutely fabulous and satisfied every single one of my taste buds.  Half of a mozzarella prosciutto sandwich and a side salad topped with the best balsamic vinaigrette dressing you will ever have from the cafe in my store!

You might have already guessed this but yes I do work at Nordstrom!  I love the cafe and I always try to choose a healthy option for my meals, for example: a half sandwich and half salad or a cup of soup and half salad.  Their tomato basil soup is on point!  Now on to my run! The second day of training is a shorter two mile run and by all heaven was I glad it was only two miles.  I have never felt pain in my calves like I did tonight.  It made the run extra challenging and my time a little slower.  The whole time I was running I kept repeating mantra’s in my head, my favorite being “It’s okay to feel uncomfortable” which I got from Julie.  I guess I was trying to make myself think the pain I was in was just me being uncomfortable, but sadly it was just straight up pain!  But what ever gets me through the run, right?!  I promised I would remember to take a picture of my stats and guess what!  I remembered! About a 12 minute mile, not to shabby for the immense pain I was feeling in my calves!  I’m hoping to find some miraculous cure for this issue, so if any of y’all know something holla at your girl so I can get back to running my 9:30-10 minute miles!  Wow, this issue is slowin me down!  But seriously, holla if you know of some way I can make this problem go poof!  Goodnight y’all, see ya in the mornin!
